Ingredients

  • 3 cups frozen strawberries
  • 1 ½ cups coconut milk
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon natural sweetener (maple syrup, honey, etc.)

Directions

  • Puree strawberries in a food processor
  • In a bowl, combine coconut milk, lemon juice, vanilla extract, and sweetener
  • Alternate between pouring a layer of strawberry puree, then a thinner layer of coconut mix into popsicle molds. Continue doing this until both are used up.
  • Insert popsicle sticks and freeze for at least 4 hours. Enjoy!Recipe source unknown
